- 250gr of sweet biscuits crushed (I use Arnott's Nice)
- 125gr of butter - melted
- 1 tablespoon of Gelatine
- 1/4 cup of water
- 250gr of Philadelphia Cream Cheese
- 1 teaspoon of grated Lemon rind
- 1/4 cup of Lemon juice
- 400gr of Condensed Milk
- 300ml of Thickened Cream
- 2 cups of pureed Mango Pulp
1 Mix crushed biscuits & melted butter to make the biscuit base. Press into a spring-form tin & refrigerate to set while preparing the filling.
2 Sprinkle Gelatine over 1/4 cup of water in a small jug & sit jug in a bowl of hot water to dissolve.
3 Beat the Cream Cheese until smooth & mix in the Lemon Rind & Juice.
4 Pour in the Condensed Milk & Cream & mix thoroughly.
5 Then pour in Gelatin & Mango Pulp & mix again.
6 Pour combined mixture into spring-form pan with the biscuit base & allow 24 hours to set in the fridge.
